Wonderful, artisanal balsamic vinegar made from organically cultivated Trebbiano and Lambrusco grapes. Ripened for at least five years. Certified regional product.
A high quality balsamic vinegar made in Modena, Italy, according to the Solera method. This entails stacking the barrels of vinegar with the youngest at the top and the oldest at the bottom. Every time some vinegar is tapped from the bottom barrels for bottling these are topped up with vinegar from the row of barrels above, that barrel is then topped up from the row above it, etc. Because the balsamic vinegar tapped is a mix of many different years, the flavour and character of the end product remain very consistent.
